Eggplant Lasagna

Ingredients
- eggplant, skinned, sliced 1/4-inch thick
- olive oil
- minced garlic
- Marinara sauce
- chopped fresh basil
- Parmesan cheese
- shredded Mozzarella
Instructions
- Lay the eggplant slices on a baking sheet, brush with olive oil, garlic, salt and pepper. Roast at 350 degrees for 15 to 20 minutes, then cool.
- Line a greased baking dish with the eggplant, building like a lasagna with alternating layers of eggplant, sauce, cheese, and basil.
- Top with cheese, then bake at 300 degrees until bubbly and brown.
